Thanksgiving Soup + Dressing Puppies

Well, we had two delightful Thanksgiving Dinners this year and with Thanksgiving Dinners come Thanksgiving Leftovers. So, I decided to do something other than just simply heat up the leftovers for several meals. Now, when I made our plates of leftovers last Thursday, I didn't have intentions of combining the ingredients, otherwise, I probably would have gotten more leftovers in quantity and variety! Anyway, the point is, I didn't really have enough to make a casserole (I didn't think), so I decided to make a Thanksgiving Soup!


First, I looked up several recipes online, just to make sure there was something special I needed to do before I got started. 6 recipes with conflicting instructions and a gut feeling later, I decided to just make it up as I went. 

Ingredients:
1 1/2 cup Turkey, shredded (leftover)
1 cup green beans (leftover)
1 cup macaroni and cheese (leftover)
32 oz beef stock
1 cup water
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon parsley flakes

Directions:
1. Put everything in a crock pot and stir it a little bit.
2. Heat in crockpot on low for 4 hours, stirring occasionally.

Review:
All in all, considering I just used what I had, this was pretty tasty. I think it would have been better with chicken stock, but I didn't have that... In hindsight, I should have used half the amount of beef stock and just used more water. Also, as I mentioned above, had I known I was going to make a soup, I may have gotten more vegetables on Thanksgiving to add. 

I wanted to somehow make dressing dumplings that would float in the soup, but turns out, I didn't really want to spend that much time learning to make dumplings, SO, I decided to make Dressing Puppies. A dressing puppy is pretty much a hush puppy, except with dressing instead of cornbread or whatever the heck is inside a hush puppy. I pretty much made up this recipe too...

Ingredients:
1 1/2 cup Dressing (leftover)
2 eggs
2 tablespoon milk
3/4 Panko bread crumbs
1/2 vegetable oil

Directions:
1. Roll the dressing into balls about 1 inch in diameter.
2. Wisk the eggs and milk together in a bow. 
3. In a separate bowl, spread the bread crumbs.
4. Put vegetable oil in skillet and turn stove to medium.
5. Dip dressing balls into egg mixture, then roll dressing balls in the bread crumbs.
6. Repeat step 5.
7. Place dressing balls into vegetable oil.
8. Fry the dressing balls until they are evenly browned an all sides.

Review:
These were surprisingly delicious! If you like dressing, you will like this recipe! Also, I enjoyed dipping the Dressing Puppies into the Thanksgiving Soup.
